i need your advice. i haven't tried your burger recipes yet, but i do have some concerns about my current burgers making techniques. my patties always shrink and turn into struggle patties. this happens all the time, no matter if i use beef, turkey or ground pork. (they end up being bomb ass sliders tho) i don't use any add-ins like breadcrumbs. just straight meat. is this my problem? or do i need to just make huge patties and hope that they shrink to a normal size?
Common problem. Make sure you make the patties stupid large, because meat does shrink up. I try to make them a little wider than the palm of my hand, and about 1½ inches thick. That should do it.
